Bitter Zero — Structured Amaro Profile

A zero-proof amaro-style aperitivo built on gentian root, wormwood hydrosol, and structured bitterness architecture.

Ingredients

  • 45ml Lyre’s Aperitif Rosso
  • 20ml Three Spirit Nightcap
  • 10ml gentian root cold infusion (optional)
  • 5ml wormwood hydrosol (food-grade)
  • 2 dashes non-alcoholic aromatic bitters
  • 30ml Fever-Tree soda water (cold)
  • 1 large clear ice cube
  • 1 wide orange peel
  • 1 star anise pod

Method

  1. Chill a heavy crystal rocks glass with a single large clear ice cube.
  2. In a mixing glass with ice, combine Lyre’s Aperitif Rosso, Three Spirit Nightcap, wormwood hydrosol, and aromatic bitters.
  3. Stir for 30 seconds — cold integration of bitter compounds is essential.
  4. Strain into the prepared rocks glass over the ice cube.
  5. Add 30ml cold soda water, poured slowly along the side of the glass.
  6. Express a wide orange peel over the glass, drop in.
  7. Balance a star anise pod on the edge of the ice cube.
