Bitter Zero — Structured Amaro Profile
A zero-proof amaro-style aperitivo built on gentian root, wormwood hydrosol, and structured bitterness architecture.
Ingredients
- 45ml Lyre’s Aperitif Rosso
- 20ml Three Spirit Nightcap
- 10ml gentian root cold infusion (optional)
- 5ml wormwood hydrosol (food-grade)
- 2 dashes non-alcoholic aromatic bitters
- 30ml Fever-Tree soda water (cold)
- 1 large clear ice cube
- 1 wide orange peel
- 1 star anise pod
Method
- Chill a heavy crystal rocks glass with a single large clear ice cube.
- In a mixing glass with ice, combine Lyre’s Aperitif Rosso, Three Spirit Nightcap, wormwood hydrosol, and aromatic bitters.
- Stir for 30 seconds — cold integration of bitter compounds is essential.
- Strain into the prepared rocks glass over the ice cube.
- Add 30ml cold soda water, poured slowly along the side of the glass.
- Express a wide orange peel over the glass, drop in.
- Balance a star anise pod on the edge of the ice cube.
